I remember when I was growing up around Christmas time there were several things to be excited about, but one I especially loved was helping my make the treats for the neighbor gifts. We would always make several different kind of cookies and treats, and then arrange them perfectly on all the plates then go deliver them. It was so much fun! And then we as a family we always get several neighbor gifts, and it was just this awesome tradition that happened every Christmas.
So this year Marshall and I decided that we needed to make neighbor gifts. We debated over several treats on pinterest (I think it longer for us to decide then actually make them) and finally decided on Chocolate Covered Peanut Butter Balls(the recipe is below). They turned out absolutely delicious, and were surprisingly simple. Then we wrapped them all and up and delivered them, and chatted with everyone for a few minutes. It was really just an awesome night and we really felt the Christmas spirit!
Chocolate Covered Peanut Butter Balls
(yields 40 peanut butter balls)
Ingredients:
2 cups peanut butter
2 cups powdered sugar
1 cup rice krispies cereal
2 packages of chocolate chips
Method:
1.Put the first three ingredients into a bowl and mix till completely combined.
2. Take about 3 tbs of the peanut butter dough and roll into balls.
3. Place the balls on a sheet of wax paper and put in the freezer for about 45 minutes.
4. A few minutes before your going to take the balls out melt the chocolate chips in a glass bowl(I just do it in the microwave. I set it for 30 seconds then stir and repeat till it is all melted).
5. Lay out some fresh wax paper, and take the balls out of the freezer, dip them in the chocolate, and lay them on the wax paper.
6. Let them set up and then enjoy!
What a fun tradition to carry on with your little family - we do that too! I have to say it's a lot of work! Your peanut butter balls look really good - they remind me of those little peanut butter cups mom made that were so good! We'd keep them in the storeroom because it was cool, I'm pretty sure mom knew we 'snuck' in there and ate them!
ReplyDeleteIt ended up being a lot more work then I thought it was going to be too! But still fun, and it is the same recipe as moms peanut butter cups only I made them into balls. I totally 'snuck' down there and ate them too haha.

ReplyDeleteYeah we ended up making two batches because Marshall and I ate most of the first one, and we didn't have enough to give away haha. They are so good!
